Tuna Fried Rice Casserole Bake


Saute some onions in a pot. Add the Palmito (Heart of Palm). I used canned but fresh is better. Cook together for a couple of minutes. Add the canned vegetable tuna, along with herbs (oregano, parsley, garlic powder), seasonings (all purpose, Salsa Lizano, Sofrito, tomato based sauce, Adobe, black pepper, paprika). Cook up for a bit. Then add your rice and cook together. I was missing a few ingredients today, like green onions (escallions).




Spoon mixture in a baking/casserole dish, press down into bowl.



Cover with cheese.



Bake until cheese has melted. Dinner is served.

You can serve this easy and delicious dish with black beans.

A simple, CHEAP one pot dish for a busy, or laid back weeknight.
